The secrets of LaForêt

“I have known LaForêt since my early childhood, I remember the image of a deer on the label, which fascinated me. Today, I am reworking this wine to give it a facelift. What has evolved : grapes which ripen sooner from the middle of the slopes, a very refined blend, barrel ageing for a proportion of the wines… With all that, our Burgundy has ideas of greatness, whilst having a simple approach. The secret ? More sunny originsfor a more crisp and vivacious wine.”
IN THE 1970s, ROBERT DROUHIN, (VERONIQUE’S FATHER), CREATED “THE BURGUNDY TO UNVEIL BURGUNDY”. HIS IDEA: THE DIVERSITY OF DIFFERENT TERROIRS AND THE ELEGANCE OF THE DROUHIN STYLE. HE CHOSE GRAPES FROM PARCELS SITUATED NEAR THE TOP OF THE SLOPES, HIGH UP, CLOSE TO THE FOREST. HE’S A NATURE LOVER AND SO CALLED HIS WINE “LAFORÊT” (THE FOREST IN FRENCH). HE THEN SET OUT TO CONQUER THE MARKET AND FOR- TUNE FAVOURED HIM.
LaForêt is colourful ! The red, is Pinot Noir. The ‘traditional’ grape of Burgundy, since roman times. Joseph Drouhin is an expert with this variety and has even planted it in the USA, in Oregon. The white, is Chardonnay. From the north to the south of Burgundy, it has a thousand and one different shades depending on its provenance. What finesse !

“With a dozen different wines, we have a good palette of aromas and flavours. My Pinot Noirs come from the Côte Chalonnaise for the elegance and the north of the Côte de Nuits for depth. As for Chardonnay: Chablis, in the north for the freshness and character, the Côte d’Or for finesse and elegance, the Mâconnais to the south for the charm and fruitiness. PART OF THE WINE IS AGED IN OAK BARRELS, AND THAT CHANGES A LOT. WHY? BECAUSE THE MARRIAGE WITH OXYGEN HAPPENS MORE GENTLY (AS SAID BY VERONIQUE DROUHIN !) RESULT: THE WINE IS NOT OVERLY WOODY BUT IS RICH IN AROMAS.

Ok, so we don’t know much and always feel intimidated when it comes to choosing. So time to stop stressing, we buy ‘LaForêt’ and “those in the know” will agree! LaForêt doesn’t take itself too seriously but does teach you something:

APERITIF “FINGER FOOD”? A LIGHT (ALMOST) IMPROVISED DINNER, LUNCH IN A TRENDY RESTAURANT, LAFORÊT IS ALWAYS IN THE RIGHT PLACE! ITS A NO BRAINER, LAFORÊT IS AT EASE EVERYW- HERE AND WITH EVERYTHING OR ALMOST! PINOT NOIR AND GRILLED CHICKEN, PASTA WITH PESTO… CHARDONNAY AND SUSHI, VEGGIE PIZZA… SIMPLE THINGS, A SIGN OF THE TIMES.

PINOT NOIR. “A seductive wine. Yum ! it smells of red fruits : raspberries, redcurrants, black- currants… After that, in the mouth, lovely spicy notes. And the silky touch, pure joy!”
CHARDONNAY. “Full of life ! A bouquet of citrus aromas, and then we find honey and vanilla, oh yes… In the mouth, it’s funky, spontaneous, striking. Really charming!”
